1 pound red potatoes, cut into bite size chunks1 med onion, chopped1 package deli sliced ham, enough for about 2 cups oil, 1 tspfresh parsleyitalian seasoning, 1 tspsalt to taste2 cans reduced sodium chicken broth (28 oz total)4 med carrots, sliced (2 cups)2 tsp minced garlic2 cans great northern beans, drained and rinsed
Add veggies, broth, ham, Italian seasoning, beans and garlic to crockpot.
Simmer 6-8 hours.
Add parsley and salt (to taste) and oil before serving.
