Tomato Red Lentil Soup

Ingredients
Red Lentils, 1.5 cup Onions, raw, 1 cup, chopped (remove)Celery, raw, 2 stalk, medium (7-1/2" - 8" long) 1 15 oz can TomatoesVegetable Broth, 4 cup such as Swanson's Olive Oil, 1 tbsp Garlic, 1 clove minced (or 2 - or can be omitted)
Directions
Heat oil in medium sauce pan, saute onions and garlic, when soft add celery and saute. Add lentils, tomatoes and broth. Simmer for 20-30 minutes until lentils are tender.

This is a delicious lunch with a slice of Ezekiel wheat bread and 1 ounce of melted cheese. Yummers
