Deanna's Beef & Black Bean Enchiladas

1 Can black beans1 lb extra lean ground beef (93%)3 Tbsp taco/mexican seasoning1 Cup water1 Small can green chiles1 Can mild red enchilada sauce7 Burrito size flour tortillas8 oz. Shredded cheddar cheese
Brown ground beef. Drain black beans and add to pan. Add taco/mexican seasoning, green chiles, and water. Stir together well. Let sit over medium heat until all the liquid has been absorbed into meat and beans (about 5-10 mins).
Divide meat/beans equally into 7 tortillas. Roll up tortillas and place in 9X13 baking dish. Pour enchilada sauce over top of tortillas. Sprinkle cheese over top of tortillas. Bake in oven (375)° for 20 mins, or until cheese is bubbly.

I made this recipe for dinner tonight and changed some ingredients in it. I used turkey meat and mozzarella instead of beef and cheddar. The calorie count is way off. If you look at the ingredient details it does not include the flour torillas. Be careful on the recipes that you choose. Delish! - 1/29/09
