Red Potato, 5 lbs peeled and dicedOnions, raw, 1 cup, chopped Celery, raw, 1 cup, diced Carrots, raw, .5 cup, chopped Olive Oil, 2 tbsp Chicken Broth, 8 cup (8 fl oz) Salt, 1.5 tsp Pepper, black, .5 tsp Milk, canned, evaporated, nonfat, .5 cup
saute the onions and celery until soft. Add chicken stock, potatoes and carrots. add salt, pepper, oregano and basil. more may be added if needed. When potatoes are soft, use potato masher on them. Add evaporated milk to soup and simmer for about an hour. Tastes better the next day! Makes about 12 servings
