Pumpkin Soup Roo Style 1 cup serving

Ingredients
3 small winter squash or pumpkin, roasted1 large onion, coarsely chopped2 ribs celery, coarsely chopped2 cloves garlic, chopped2 tbls. butter2 tbls. oil4 cups chicken stock1 Tbls nutmeg, ground1 tsp. chili powder1 tsp. black pepper1 tsp salt1 tsp coriander ground
Directions
Roast pumpkin, and when soft, scoop out and add to blender.

Saute celery, onion, and garlic in butter and canola oil, add to pumpkin; along with 1/2 of stock. Puree

Transfer to saucepan, add remaining stock and spices, and heat through
