Bailey's Irish Cream Truffle Bites

1 pound chocolate, chopped2/3 cup heavy whipping cream1/3 cup Bailey's Irish CreamPowdered sugar
1. Place chocolate in a heat proof bowl and set aside. Bring cream to a boil in small pot.
2. Pour cream over chocolate and let sit 1 minute. With a rubber spatula, begin stirring cream and chocolate together in center of the bowl. Gradually incorporate the remaining chocolate and cream for the side.
3. Stir in Irish Cream. Cover and let stand overnight or refrigerate up to 2 weeks.
4. Scoop mixture out into small round balls, about 3/4-inch in diameter. Roll the truffles, individually, in the palms of your hands to achieve a uniform shape.
5. Store truffles in refrigerator for up to 2 weeks and toss them in sugar before serving. (We also like rolling them in white chocolate shavings or coconut!)

I agree with Karolab-traditional truffles(this is a traditional recipe-its not slimmed down!) are no where near good for you. the seving size here is TINY! you can use half and half,or even soy milk, but you may need abit more choc. try using dark choc or sugar-free choc to cut calories even more - 12/14/08
