Healthy Peaches n' Cream Kugel

1 lb. bag egg noodles (can use whole wheat if desired) 1.5 cups egg substitute (such as Egg Beaters - equivalent to 6 whole eggs)1 lb. (16 ounces or 2 cups) 2 percent milk-fat cottage cheese1 cup 2 percent milk2 tbsp. low-fat sour cream2 tsp vanilla extract1 15-16 oz can peaches, packed in water, drained and chopped4 tbsp. Splenda Sugar Blend for Baking1 tsp. baking powder1/4 cup melted Promise (or other brand) fat free margarineNon-stick butter flavored cooking spray
Cook egg noodles in boiling water for 10 minutes. Drain well.
Whisk egg substitute, milk, sour cream, margarine, vanilla extract, Splenda and baking powder together in large bowl. Add cottage cheese and chopped peaches. Mix well. Add noodles. Pour into a large square or rectangular glass pan sprayed with non-stick butter flavored cooking spray. Bake for 1/2 hour at 350 degrees, then 400 degrees for 15 to 30 minutes, until firm set.
Makes about 8 servings, equally divided
