Smashed Cauliflower (Mock Mashed Potatoes)

Ingredients
1 fresh head of cauliflower3 cups low sodium chicken broth 4 dashes ground pepper Parmesan Cheese - grated
Directions
Cut cauliflower into florests or smaller.
In a large pan boil the chicken broth. Once the broth is at a boil add in the cut cauliflower, cover and cook for about 10 minutes on medium heat, or until the cauliflower is almost soft. Uncover and turn heat to high, cook for another 5-10 minutes (depends on the size of the floriets you cut) test the cauliflower for softness and cook until some of the chicken both reduces.
Remove from heat, use a potatoe masher and mash the cauliflower until it looks like mashed potatoes, add in black pepper, grated cheese and margarine.

    What kind of margarine? Margarine is loaded with trans-fat. It's a lot better to use the butter. - 3/17/13
