Garlicky Baked Butternut Squash

Ingredients
2 Tbsp fresh parsley or 1 Tbsp dry2 Tbsp olive oil2 garlic cloves, minced1 tsp salt1/2 tsp pepper3 1/2 lb butternut squash peeled and cut into cubes1/4 cup grated parmesan cheese
Directions
1) In a large bowl combine parsley, oil, garlic, salt, pepper, and cheese. Add squash and toss to coat.
2) Transfer to an ungreased shallow baking dish. Bake, uncovered, at 400F for 50-55 minutes, until squash is tender

    I made this for dinner tonight. It was good but a little bland. Not sure what seasoning I'll add but I'll definitely try it again. We love squash. - 9/15/10
