Improv Black Bean Soup with Chili & Lime

4 cups black beans (dry, soaked & rinsed, although canned would probably work just as well)1 can tomato soup1 can chicken (or veg.) broth2 c. water1 c. salsa1 c. each of chopped carrots, celery & onion (or whatever veggies you like, ie peppers)4 tsp garlic powder1 tsp coarse ground black pepper1 tbsp chili powder1/4 c lime juice OR try 1 tbsp Cholula's Chili & Lime Seasoning, and 2-3 packets of True Lime instead. Great with brown rice for that perfect protein. Use less garlic & chili for less spicy, although this recipe does not burn the palate. I called it "Improv" because I made it up after reading lots of black bean soup recipes. Do whatever you like, the black beans will like you back!
If using dried black beans, soak overnight following package instructions. In large pot, blend broth (may use vegetable broth for a vegetarian version), tomato soup, salsa, water and spices. Heat to almost boiling. Add vegetables and beans, stir and let come to a boil. Reduce heat, cover and simmer for 1.5 to 2 hours, or until beans have the consistency you desire. Makes 8 1-cup servings. Pour over cooked rice, or add chicken for even more protein.
