Vegetarian Chilli

Ingredients
2 tbsp olive oil½ teaspoon ground cumin½ teaspoon turmeric1 red onion, sliced2 garlic cloves, crushed1 red pepper1 carrot3 sticks of celery255g/9oz vegetarian mince such as Quorn450ml/16fl oz vegetable stock400g/14oz can chopped tomatoes4 tablespoon tomato puree400g/14oz can red kidney beans, drained and rinsedsaltfreshly ground black pepper
Directions
• Heat the oil in a large frying pot. Saute the spices for few minutes.
• Add in the onion and garlic and fry for 3-4 minutes.
• Add the pepper, celery and carrots and cook for 4-5 minutes.
• Stir in the vegetarian mince and fry for couple of minutes.
• Add the stock and the tomatoes. Cover and simmer for 20 minutes.
• Add the kidney beans and simmer for a further 15 minutes.
• Season to taste with salt and freshly ground black pepper.
• Serve with corn bread and/or steamed rice and a spoon of tomato salsa
