Chicken Soup-a-fabulous

Ingredients
1 1/2 c. chopped onion4 c. chopped carrot (Any vegetables are good - if you subsittute - add them when you add the potato)2 cloves garlic2 T. olive oil2 c. cooked chicken (shredded or cubed, or sub for tofu)8 c. vegetable stock (or chix/beef stock)1 c. chopped potato (the skin is healthy!)1/2 c. peanut butter (smooth or chunky-trust me -it's DELISCIOUS!)1 T. parsley (fresh is best)salt/pepper to tastered pepper (if you like-delicious)
Directions
Chop onion, carrot, garlic - saute in olive oil 10 min. Add stock, chicken, potato - bring to boil, simmer 8 min. Add peanut butter, parsley, salt/peppers (mixing peanut butter with some stock helps when you stir it into the pot) That's it! Makes about 12 - 1 cup servings.
