Healthy, Creamy Chicken and Brown Rice

Ingredients
* *Brown Rice, long grain, 5.5 cup (cooked ~ I used 2 cups of uncooked brown rice which equalled 5 cups) * Carrots, 1 cup slices * Celery, 4 stalks * Vegetable Broth, 4 cup (remove) * Milk, nonfat, 3 cup (or 1 cup of powdered skim milk) * Broccoli, (8 ounces) * Cauliflower, (8 ounces) [I used a 16 oz bag of broccoli/cauliflower "Winter Mix"} * Chicken Breast, no skin, 20 ounces (2 breast halves) salt, pepper and Mrs. Dash, as desired.
Directions
I used premade rice that I had refrigerated overnight.

Chop & toss veggies & chicken in a pot. Add rice, broth and milk. (If you use powdered milk, add 2 cups of water to the mix.... more if you want a soupier version, less if you want a "cassarole type consistency.)
Cook until the chicken is done. Serve with a roll. Makes approx. 12 ~ 1 cup servings.
