Banana Cake Redux

Ingredients
1 1/4 c. unbleached flour1 c. whole-wheat flour1 1/2 tsp. baking powder1 tsp. baking soda1/2 tsp. salt1 c. mashed ripe bananas (about 3)1 c. sugar2 tsp. lemon juice3/4 c. skim milk1/2 c. unsweetened applesauce1 tsp. vanilla extractegg replacer equivalent to 2 eggs (Ener-G brand)
Directions
1. Mix lemon juice and milk together in a small cup; let stand 5 minutes.
2. Grease and lightly flour a 13x9x2 baking pan.
3. Mix all ingredients (including the milk/lemon juice mixture) well using a fork or an electric beater. Pour batter into prepared pan.
4. Bake at 350 for about 35 minutes or until done. Cool thoroughly on wire rack.
5. Dust with powdered sugar (optional).

    Delicious and so moist! The powdered sugar is quickly absorbed by the cake, so may require resprinkling before serving, but this cake was loved by the whole family. Will definitely make again! - 4/29/14
