whole wheat sweet potato pancakes

Ingredients
1.5 cups whole wheat flour3.5 tsp baking powder1tsp salt1.5 tsp pumpkin pie spice.25 cup sugar1.5 cups mashed sweet potatoes2 large eggs1.75 cups 2% milk.125 (1/8) cup olive oil
Directions
Mix dry ingredients well. Mix wet ingredients until well blended. Add dry ingredients just til mixed. Drop by quarter cup onto hot lightly greased/sprayed skillet. Brown on both sides (about 1.5 minutes each.) Makes 18 four inch pancakes. 3 pancakes per serving. Serves 6. Freezes well. Does not need syrup.

    This recipe is good. I made some adjustments by using grated sweet potato instead of mashed and half a mashed banana instead of olive oil. I also substitued the eggs with egg beaters and added 2tbs of raw sugar. - 6/11/09
