Deanna's Chicken Pot Pie

4 chicken boneless/skinless chicken thighsOlive Oil non-stick spraySalt/Pepper to taste1/4 cup water2 cans condensed cream soup (I used cream of mushroom & cream of broccoli)1 can Mixed Vegetables2 tsp Italian Seasoning or to taste1 cup Bisquick1 egg1/2 cup 1% milk1/4 shredded cheese (colby/jack is good)
Spray frying pan with non-stick. Add chicken - salt and pepper to taste. When cooked thoroughly, add just a quarter cup of water to deglaze your hot pan. Remove from heat. Shred chicken with a fork or dice it up. Add in cans of soup, mixed vegetables, and italian seasoning. Pour into oven-safe baking dish that you have coated lightly with non-stick spray.
Mix bisquick, egg, and milk together. Pour over top of chicken mixture. Bake for 15 mins. Add shredded cheese to the top of the crust, return to the oven for another 15 mins. Allow to cool for 5-10 mins. before serving.
