1.5 lbs boneless, skinless chicken breast, cooked and cubed1.5 cups water1 can diced tomatoes1 can tomato puree4 oz can diced jalapeno2 Tbl Dried Onion3 Tbl Chili powder2 cups Cooked Brown Rice
Directions
Put all ingredients together in a medium pot or large pan, bring to a gentle boil.

    I changed this recipe quite a bit. I added some bell pepper, garlic, a can of black beans and chicken broth instead of water. Also added a little whole wheat flour to thicken up the sauce. 3 tbs of chili powder is A LOT! I used 1.5 tablespoons and it was perfect. - 12/8/08
