Carla's Snowballs

Ingredients

1/4 cup butter (Real butter, not margarine - unsalted)1/2 cup evaporated milk (2%)2 cups sugar2 tablespoons cocoa1 teaspoon vanilla extract2 cups shredded coconut2 cups rolled oats
Boil butter, milk, & sugar for 3 to 4 minutes; stirring constantly with wire whisk. Remove from heat. Add cocoa & stir well. Add vanilla and stir well again. Add coconut and oats and mix well.
Using a tablespoon scoop portions into your hand and roll into small balls. Roll in more coconut. Let cool in refrigerator.
Balls need to be formed while mixture is warm or they will not form properly. If mixture is too hot, have a bowl of cold water nearby to dip your hands into to cool. This will also help to roll balls easier & to help them stay together much better.
Makes about 3 dozen snowballs.
