Light Banana Bread

Ingredients
1/2 c. applesauce1/2 tsp. baking soda1/2 c. sugar1/2 tsp. salt2 eggs, large1/4 tsp. ground cinnamon1 1/4 c. flour1/4 tsp. ground nutmeg3/4 c. whole wheat flour1 c. mashed ripe banana1 tsp. baking powder1/2 c. chopped pecans
Directions
Makes 6 servings
Serving Size = 2 slices

Preheat oven to 350 degrees. Combine applesauce, sugar and eggs in a large bowl. Beat the combination well. In a separate bowl, combine all dry ingredients. Add dry ingredients and bananas alternately to the egg mixture, ending with banana. Stir in pecans. Pour into greased loaf pan and bake for 45-50 minutes. Turn out onto rack after removing from oven and let cool. Yields one loaf.
