Inky's Italian Lentil Soup

Ingredients
4 Medium Carrots (sliced)2 Stalks Celery (sliced)1 large Onion (chopped)Small-Medium Head Cabbage (cored and cut into 1 inch pieces)2 cups Dry Lentils (rinsed & drained)28 oz Can Crushed Tomatoes3 tsp Splenda3 tsp Salt1 tsp Oregano1/2 tsp Pepper1 tsp Garlic Powder2 Tbsp Olive Oil
Directions
In a large pot cook carrots, celery and onions in hot olive oil about 5-10 min or until tender.


Stir in remaining ingredients and bring to a boil. Reduce heat, cover and simmer for 45 min or until lentils are very soft.


Top with 1 Tbsp grated cheese for an extra yum!


Yeilds 13 (1 1/4 cup) servings.
Only 2 WW points/serving!! (2.5 if you add 1 Tbsp grated cheese)

    This soup is fabulous! I had some left over beef stock so I used that as the base. Wow it is amazing. I thought I had to click on all the stars for the rating to give this a 5 star rating but it just took the first star and won't let me change it. - 12/29/08
