Delicious Potato Casserole

Ingredients
5 pounds red potatoes- (cooked, peeled & grated)1.5 sticks butter1 large onion- (chopped)1 pint half & half
Directions
Boil, peel and grate potatoes. Brown chopped onion in half stick of butter, then add remaining butter to melt. In 3 qt. casserole dish, layer grated potatoes and onion/butter mixture. Pour pint of half & half over the top. (Best if prepared a day in advance and cooked next day.) Bake for 1 hour at 350 degrees. Stir before serving. Makes 12 1-cup servings.
