Baked Pumpkin Oatmeal Pudding

1.5 c organic pumpkin pie mix4 eggs from pastured chickens2 c 1% milk3/4 c quick cooking organic oats1/3 c organic dried cranberries3 T organic shelled hemp seed
mix the eggs, pumpkin, and milk together with wire whisk
(I do this right in the enameled cast iron baker I bake the pudding in)
add the oats and cranberries and stir to evenly distribute.
sprinkle the hemp seed on top.
bake at 250 until firm in the middle
aprox 1 hr if pudding is 2" thick.
