Spinach & Mushroom Lasanga

Ingredients
Trader Joe's Organic Marinara (no salt added), 3 cup Cottage Cheese, 1% Milkfat, 1.5 cup (not packed) Cheddar or Colby Cheese, Low Fat, 2 oz Spinach, frozen, 2 cup Mushrooms, fresh, 1 cup, pieces or slices Henry's Lasanga Noodles, 8 oz Dried Basil (to taste)Black Pepper (to taste)Sea Salt (to taste)1 tbsp crushed garlic
Directions
pre heat oven to 350 degrees. cook noodles in pot.
Mix 2 kinds of cheese together in a seperate bowl.
Mix Sauce w/ spices and garlic in seperate bowl.
spray cooking dish w/ olive oil spray
Put in cooking dish in layers
1. sauce
2. noodle
3 cheese
4 veggies
and repeate until you create 3 layers worth

bake in oven for 30-40 mins and serve

    I used this recipe as a basis for a vegetarian no pasta lasagna - it was very good. My changes: I omitted the lasagna noodles, used my own tomato sauce from canned tomatoes, onion, garlic, oregano. I had 3 layers instead of 4: Sauce, spinach & mushrooms, cottage cheese, topped with grated cheese - 3/17/11
