Rumbamel's version of VMF2004's Skinny Gingerbread cookies

-1 c unsweetened applesauce-1/2 c white (granulated) sugar-1/2 c light brown sugar-1 large egg-1/4 c molasses-1 t ground cinnamon-1 t ground nutmeg-2 t ground ginger-1 3/4 c white flour-1 3/4 c whole wheat flour-1 1/2 t baking soda
Mix the appplesauce and sugars with a mixer until creamy and the sugars have dissolved. Then add the egg, molasses and spices. SLOWLY add the flours and baking soda mixing as you go.
Let the dough chill in the refridgerator at least an hour or overnight. Cut the dough in quarters and roll on a well floured surface and floured rolling pin. It will be sticky! Roll out to a thickness of about 1/8 -1/4 inch thickness. Cut out shapes and place on either a lined or lightly sprayed baking sheet and bake at 350 degrees for 10-12 minutes. Cookies will rise a bit when you bake them.
Makes 78 cookies about 3 3/4 in. height and about 2 in wide.

Tastes okay, but the cookie turned out really thick and almost tough to chew. I guess they are okay if you like to dunk them in milk or something. I couldn't even pass them off to coworkers! I won't be making these again. - 8/16/09

I agree, they did come out thick and a bit dry. My father-in-law, who recently became diabetic, loved them because he could eat several of them. I will have to tinker some more. Thanks for trying them and letting me know what you thought.
