Eggnog Cookies

Ingredients
2.5 cups all-purpose flour1 tsp baking powder.5 tsp ground cinnamon.5 tsp ground nutmeg1.25 cups white sugar.75 cups salted butter, softened (1.5 sticks).5 cup lowfat eggnog (2%)1 tsp vanilla extract2 large egg yolks.5 tsp ground nutmeg additional to garnish before baking
Directions
Preheat oven to 300 degrees F.

Combine flour, baking powder, cinnamon & nutmeg together in a bowl.

In large bowl, cream sugar and butter together, then add eggnog, vanilla & egg yolks. Beat at medium speed until smooth. At low speed, add in flour mixture just until blended. Do not overmix.

Drop by rounded teaspoonfuls (not measuring spoons) onto ungreased baking sheet, 12 to a sheet. Sprinkle lightly with additional nutmeg.

Bake for 23-25 minutes or until bottoms just begin to brown. Transfer from pan to cooling racks immediately.

Makes about 3.5 dozen cookies ~ one per serving.
