Lemon Roasted Red Potatoes

Ingredients
650 grams red potatoes, quartered2 tablespoon lemon juice1 teaspoon coarse salt1 teaspoon black pepper, freshly crackeda few spinkles of Paprika
Directions
Heat oven to 350° F.

In roasting pan, combine all ingredients; toss to coat. Roast 50-60 minutes, turning occasionally, or until tender.

    Made these tonight for dinner but added 2 teaspoons minced fresh rosemary and 1 tablespoon olive oil. Left out the paprika. They were excellent!!! - 2/8/09
