Hannukah Potato and Zucchini Latkes (Pancakes)

Ingredients
3 medium/large potatoes, peeled1 zucchini (or substitute a zucchini for potato)2 small/medium onions1 small carrot4 egg whites3 tsp. baking powder8 Tbs. flourPinch of celery seed.5 tsp. black pepper
Directions
Grate the potatoes alternately with onion, zucchini, and carrot. Drain the liquid. Mix with the remaining ingredients. Spray a good amount of Pam or another spray on a frying pan. Drop mixture by tablespoons into hot pan and flatten with fork to make the latkes thin. Fry on medium heat until brown. Flip over and brown the other side as well.

Best eaten right away with any kind of applesauce.

If you want to make more latkes, make them thin. Enjoy!
