Holiday Cake

Ingredients
Cake:2 cups flour (1 white, 1 wheat)1 cup sugar1 cup bran4 eggs3 c grated apples1/2 c raisins1/2 c walnuts1 t vanilla2 t cinnamon1/2 t salt1 t baking powder1 t baking sodaFrosting:1/2 c chopped pecans1 box powdered sugar (or to taste)8 oz cream cheese1 stick butter or margerine1 t vanilla
Directions
Grate apples with the skin. Mix dry ingredients including apples. Add eggs and vanilla; blend well. Pour into a greased bundt pan. Bake 50 minutes at 350 or until toothpick comes out clean.

Frosting: Cream stick of butter and 8 oz cream cheese. Add powdered sugar to taste and 1 tsp vanilla extract. Add chopped pecans last or put on top of frosted cake. Drain the cherries on paper towels. Frost cake when cool. Arrange cherries on top.
