Lower Carb Peanut Butter Dessert

Ingredients
8 oz. Cream Cheese, softened1/2 c. Peanut butter1-1/2 c. Splenda16 oz. Cool Whip15 mini peanut butter cups, chopped, divided1 c. milk1 pkg. s/f chocolate pudding mix
Directions
In a mixing bowl, beat the cream cheese, peanut butter and 1 cup Splenda until smooth. Fold in half of the Cool Whip. Spread in the bottom of a 9" square pan. Sprinkle with 10 chopped peanut butter cups.

In the mixing bowl, beat the milk, pudding mix, and remaining Splenda on low speed for 2 minutes. Fold in remaining Cool Whip. Spread over peanut butter cups. Chop remaining peanut butter cups; sprinkle over the top. Cover and chill for at least 3 hours.

Yield: 12-16 servings

    This recipe is sooooo good! I used the weight watchers cream cheese and only used half a cup of splenda with the cream cheese and peanut butter and did not use any more for the pudding mix and it still came out super rich and delicious..I will definitely be making this for my friends at work! - 7/3/11

    Tried it last Sat night and got RAVE reviews. It's a little rich for me. Next time I'll cut out the splenda from the upper layer and reduce the splenda on the bottom layer to 1/2 cup. Otherwise-Delish!! - 1/11/10

    I read the feedback prior to making this dessert. I added only 1 c of Splenda instead of the 1 1/2 c the recipe called for. To get 16 servings out of this dessert it would probably amount to 1/4 C. I used FF milk as well. It did leave a weird after taste in my mouth. I probably will not make again. - 1/31/20

    I use the instant variety. Hmmmm...size. I don't know the exact ounce weight...it's a bigger box. Enjoy!!

    This was so easy to put together. I used the one cup splenda in the PB part but not the half cup in the pudding part. It was really good. I did use the low fat cream cheese and it turned out fine. Thanks for sharing. - 2/11/12

    So I made this this weekend and my family and I LOOOOOVED IT! It is the perfect blend of ingredients for a sweet treat not too rich but like a fabulous mouse dessert! I think next time I make it I will try it with some graham cracker crust to make it more like a cheesecake. But DEF will use again! - 1/30/11

    I fixed this for our Bunco group and they all raved about it and wanted the recipe. I also used only 1/2 cup of Splenda with the cream cheese and peanut butter and did not add any Splenda to the pudding. - 1/29/10
