Ingredients
Curry Paste, 25 grams *Coconut Milk, 1 cup 1 cup waterCarrots, raw, 1 cup, chopped Broccoli, fresh, 1 cup, chopped Tofu, firm, 2 cup Zucchini, 1 cup, sliced Cauliflower, raw, 1 cup Onions, raw, 1 cup, chopped
Directions
Mix the Curry Paste (I use Red) with a bit of the Cocunut Milk until blended, then add the remainder. Add about another cup of water and the carrots. Bring to a boil and then simmer. While that is simmering cube up your tofu and fry it til browned on all sides. Set aside. Add the rest of your veggies to the curry and bring to another boil before turning down to simmer. At this time start your rice, we prefer sticky! Once your rice is done dish out and then scoop out some Curry and voila!
