Skinny Ham, Potato & Leek Soup

Ingredients
1 cup cauliflower, steamed, liquid reserved3 leaks, bulb sliced4 cups fat free chicken broth2 medium yukon gold potatoes, diced1 cup lean ham1 cup nonfat milkolive oil spraycracked black pepper to taste
Directions
Steam cauliflower in microwave, reserve liquid.

In a large pot boil diced potatoes until tender, drain and divide in half.

While potatoes are cooking, lightly spray a skillet with olive oil. Add sliced leeks and cook until softened.

Using a food processor or immersion blender, combine steamed cauliflower and reserved liquid (at least one cup, add more water if necessary), half of the potatoes, and the leeks. Puree mixture until smooth.

In large pot heat stock, puree and ham until near boiling. Add milk, reserved potatoes, and pepper to taste.

Enjoy~ Great with crusty whole grain bread.
