Green Salad

Ingredients
1 small pkg. lime gelatin6 oz. cream cheese½ cup milk½ cup plain, nonfat yogurt1 small can crushed pineapple, drained2 cups mini marshmallows1/3 cup walnuts, shelled and chopped16 maraschino cherries, drained and chopped1 half-pint heavy whipping cream
Directions
Cook milk, yogurt, cream cheese, marshmallows and Jell-O in double boiler until mixture is smooth, green and lump-free. Set aside and whip chilled whipping cream to the stiff-peak stage. Chop walnuts, and drain cherries, squeezing excess juice from them with a paper towel, then chop them. Fold whipped cream, drained pineapple, nuts and cherries into double boiler mixture and pour into desired mold. Refrigerate overnight, and unmold onto lettuce bed after 30-second immersion of mold in hot water. Garnish with green sugar and a maraschino cherry, if desired. Serves approximately 16.
