Kale + Potatoes = Love

6 Small Potatoes (I used red)1 Bunch KaleEarth BalanceSalt
Directions
Cube the potatoes and boil them until soft, about 15 minutes. While those are cooking, chop up the kale and saute in EB until tender. Add to potatoes along with desired amount of EB and salt.

    Who knew potatoes and greens would be so delicious. I admit that I made some variations as I am not a fan of butter, but the combo is great. I made mine with mustard greens, garlic, broth and balsamic vinegar, but the combo is fantastic just as the name indicates. - 1/15/09
