1lb 98% fat free ground beef1 Onion, diced2 cloves garlic, minced1 serrano chili pepper, diced1 can diced tomatoes1/2 can dark beer1 can tomato sauce1/2 can beef broth1/2 packet chili seasoning, divided2 teaspoons Oregano1 teaspoon cayenne pepper1 can red kidney beans
1. Spray stock pot with good amount of cooking spray. Brown beef, adding half of the chili seasoning.
2. Add onion, garlic, and pepper and saute until onions are soft.
3. Add diced tomatoes, beer, tomato paste, and beef broth.
4. Add seasonings and 1/2 of the kidney beans. Simmer for 1 1/2 hours.
5. Add other half of kidney beans and simmer for another 30 minutes.
Makes 3-4 servings.
