Fried Chicken & Rice

Chicken1/2 cup Break Free Egg Product.5 cup extra light virgin olive oil.5 cup whole wheat flour4 half chicken breastsRice1 Uncle Bens whole grain rice4 oz sliced mushrooms5 strips of green pepper diced.5 small onion diced2 tbsp. flax seed
Makes 4 servings of 1/2 chicken breast and 1 cup rice each.
Heat up olive oil in large skillet.
Dip chicken in egg substitute, then in flour, the put in pan to fry. Season to taste. (I use Mrs dash Chicken seasoning, and pepper)
Brown on both sides then set heat to medium and cook until inside is white. When finished put paper towel onto a large piece of foil and wrap chicken to keep hot.
While chicken is cooking, in a separate pan cook rice as directed on pkg.
After taking chicken from skillet, saute mushrooms, green pepper, and onion with drippings. Add cooked rice and flax seed and stir.
