Tess' Mediterranean Tuna Salad

Ingredients
1 C fresh spinach, torn (or dark salad greens)2 Tbs sliced scallions (or onion)1/4 C finely diced bell pepper (I use red or yellow for eye appeal)3-4 pitted Kalamata, black or green olives, roughly choppedYield of 5 oz canned tuna once well drained1 Tbs Balsamic, cider, wine or malt vinegar1/2 Tbs light olive oilTuscan Blend Seasoning to tasteS&P to taste
Directions
Create a bed of spinach on serving plate or bowl.
Mix together tuna, olives, scallions and peppers; mound on bed of spinach.
Sprinkle with seasonings and finish with drizzle of vinegar and olive oil.

Looks so lovely why not serve with a nice chilled Pinot Grigio. Yumm!
