Buffalo Chicken Chili

Ingredients
1 Pound (500 grams) Chicken Breast, Diced1 Tablespoon EVOO (Olive Oli)1 Large Carrot, Diced1 Large Onion, Diced2 Celery Stalks, Diced2-4 Cloves Garlic, Minced1 Tablespoon Paprika (preferably Smoked but regular is ok)Salt & Pepper2 Cups Chicken Stock 1/4-1/2 Cup (4-8 tbls) Hot Sauce1 Cup Tomato Sauce1 Cup Crushed Tomatoes80 Grams Blue CheeseFlat Leaf Parsley for GarnishServe over rice or crunched up tortilla chips.
Directions
In a large pot over medium heat, add EVOO. Once the pot is hot, brown the chicken. Add carrots, onion, celery, garlic, paprika and salt and pepper to taste. Cook, stirring frequently, for about 3-4 minutes. Add Chicken Stock. Add Hot Sauce, Tomato Sauce and Crushed Tomatoes, bring to a boil. Simmer 10-15 minutes to let the flavors come together.

Serve over steamed rice. Sprinkle the Blue Cheese over the top (20 grams per serving). For a crunchy alternative crunch up some tortilla chips and sprinkle over the top.
