Coconut Vegie Curry with Chicken

1 pound chicken breast, cooked and diced1 Tbsp canola oil1 cup diced onion1 cup diced red pepper3 cloves garlic, minced2 ounces prepared curry spices2 cups diced cauliflower2 cups diced broccoli2 cups diced sweet potato1 Tbsp fresh cilantro2 cups chicken broth1 cup coconut milk
Cook chicken and set it aside or use leftovers.
Cook onion, red pepper, and garlic in oil until mostly soft. Add curry spices (half a four ounce can). Allow fragrance to develop. Add cauliflower, broccoli, and sweet potato. Cover with chicken broth and boil until vegetables are just tender. Add cooked chicken, coconut milk, and cilantro.
