Brigid's Cornbread Casserole

Non-stick cooking spray3 tablespoons butter, softened3 large egg whites1 (8-ounce) block fat-free cream cheese, softened1/2 cup finely chopped onion1/2 cup finely chopped red bell pepper1 (15 ¼ -ounce) can whole-kernel corn, drained1 (14 ¾ -ounce) can cream-style corn1 can (7-ounce) green chiles, drained1 (8 ½ -ounce) package corn muffin mix1/4 teaspoon black pepper2 teaspoons chili powder2 teaspoons cayenne pepper1 scant teaspoon cuminGrated sharp cheddar cheese (optional)
Preheat oven to 375 degrees. Coat an 11 x 7-inch baking dish with non-stick cooking spray.
In a large bowl, combine butter, egg whites, and cream cheese and whisk until smooth. Stir in onion, bell pepper, whole-kernel corn, green chiles, and cream-style corn; mix well.
Add muffin mix and spices, stirring until well combined. Pour into prepared baking dish.
Bake for 50 minutes or until a wooden toothpick inserted in center comes out clean. To garnish with the cheese, wait until the surface forms a crust, about 40 minutes. Cover with a light layer. It will create a divine crust with a vague, cheesy flavor.
