Bacon and Potato Soup

8 slices of bacon1 large onion10 baby carrots2 stalks celery5.3 cups chicken stock4 large potatoescayenne to tastesalt to tastepepper to tastecheddar cheese to add to the soup/on top as a garnish/not at all it's up to you.
First cook all of your bacon and set aside to drain.
Dice the onion, carrots, celery, and potatoes. Add all ingredients, including bacon, into large pot of chicken stock and bring to a boil. Once at a boil, simmer for 30-45 minutes. Sometimes I add the cheese to the soup, sometimes I add a little on top, and sometimes I leave the cheese out all together, it is all about preference. Add seasonings to taste. Enjoy.
