L.R. Fruitcake cookies

Ingredients
1 cup butter1-1/2 cups sugar3 eggs1-1/2 cups whole wheat flour1-1/2 cups oat bran1 tsp. baking soda dissolved in2 T. hot water1/2 tsp. cinnamon1/2 tsp. salt3 cups chopped pecans1/2 lb. chopped pitted dates1/2 lb. chopped candied pineapple1/2 lb. chopped dried mango slices1/2 lb. chopped dried apricots1 cup golden raisins1 cup craisins(1/2 lb. of any one of the fruits measures anywhere from 1-1/4 to 1-1/2 cups.)
Directions
Cream butter and sugar on high for a minute or two. On low speed add eggs one at a time, beating just until mixed. Mix in soda water. In a small bowl combine flour, oat bran, cinnamon and salt. Stir into batter. Remove from mixer and stir in nuts and fruits by hand. Drop by 1/8 cupfuls onto greased baking sheets. Bake at 375 for 10-12 minutes or until golden brown. Remove from pan and cool on counter top. Makes about 89 cookies.

    I love fruitcake! The only thing I dont like is the candied fruit so I suppose I could use another kind of dried fruit. Sound great! - 1/4/09
