Twice Baked Potato Soup

Ingredients
2 cups diced potatoes1 medium chopped Vidalia onion3 cups water1 cup nonfat dry milk5 tbs. bacon pieces1 cup shredded cheddar cheese1/2 cup sour cream5 tbs. french fried onions1/2 cup instant potato flakes for thickener
Directions
Boil potatoes and onions in water about 30 minutes. Mash potatoes a little, leave a few chunks in it. Add 1 cup nonfat dry milk. Add instant potatoes to thicken the soup. Add the bacon pieces, cheddar cheese, and sour cream. Mix well till cheese is melted. Serve in a soup bowl. Sprinkle french fried onions on top. Makes 6 (3/4 cup)servings.
