Kate's Anticholesterol Boiled Fruit Cake

2 Cups water3 Cups Raisins (or any dried fruit)1 Cup Dates (you can also add walnuts)200 ml Olive Oil200 gr Honey (or any old jam)2 tsp Mixed Spices2 Cups wholemeal SR Flour1 Cup Psyllium Husks1 Cup Rolled Oats4 Eggs lightly beaten
Boil water, fruit, honey, oil and mixed spices for 3 minutes. Cool, had mixture to remaining ingredients
Line 12" square tin with Bake paper, also smooth top with Bake paper and leave onto cook, in 180 degrees oven for 50 minutes.
Turn out immediatly and wrap in tin foil to cool, keeps the cake really moist.
Cut 8x4 slices.
