Taco Filling

Ingredients
1 pound lean ground beef1 teaspoon salt1 teaspoon onion powder2 teaspoons EACH chili powder & cornstarch 1/2 teaspoon cumin (optional) 1/4 teaspoon garlic powder dash EACH oregano and cayenne pepper 1/2 cup tap water
Directions
Fry the hamburger in a large skillet until it is brown. Break it up finely with a fork. When it is cooked, all the way through, drain off all the fat. Measure the seasonings and cornstarch into the skillet with the meat. Mix it up and add the tap water. Bring the mixture to a boil over medium heat. Reduce the heat and simmer for a few minutes. Remove from the heat.

Use this to fill hard or soft taco shells. (Not calculated in nutrition information)

When I use hard shells, I fill the taco shells with the filling and top them with cheese. Then I arrange them in a baking pan and bake them at 400° for a few minutes to crisp up the shells and melt the cheese.

    Fast and tasty! I'd make it again. The nutrition info doesn't specify the fat content of the beef, but it seems to be higher than the 8% that I used, at least according to the nutritional analysis on the package. The result is that I was "charged" for more fat than I consumed. - 5/19/09

    It's hard to calculate because I usually use the cheapest, most fattening ground beef I can find. After I cook it, I drain it and rinse it for a minute under hot water to remove most of the fat, yeilding a leaner beef product. I'm just now sure how "lean" it is exactly.
