Sweet Potato Pecan Quick Bread

Ingredients
1 cup whole wheat grahm flour1/2 cup oat flour2tsp baking powder1/4 tsp salt1/4 tsp ground cloves1/4 tsp nutmeg1tsp cinnamon2/3 c splenda 1/2 tsp vanilla extract2 Tbsp molasses1 cup chopped pecans1/2 c chopped dried fruit (I like apricots or dates)2 large eggs1/2 c applesauce1 Tbsp canola oil3Tbsp milk1cup cooked, mashed sweet potatoes
Directions
Stir together flours, baking powder, salt and spices in mixing bowl. Stir in Splenda, pecans, and dried fruit.
In a seperate bowl combine eggs, applesauce, milk, vanilla, oil and mashed sweet potatoes. Stir to blend well. Add wet mixture to dry ingredints and mix just until moistened. Pour batter into greased 9x5x3 inch loaf pan. Bake at 350 degrees for about 1 hour and 10 minutes or until toothpick inserted in the center comes out clean.
Cool about 15 minutes before removing from pan.
