Ingredients
Directions
4 skinless, boneless chicken breast (about 1 lb), chopped into 1" cubes2 cups chopped broccoli2 cloves of garlic (or more if you like it), minced or pressed1 cup chicken broth (or veggie broth, or water, or white wine)1 cup plain fat free yogurt8 oz whole wheat penneCooking spray
Fill a pot with water for the pasta, heat to boiling while saute-ing the veggies and chicken.
Spray a large frying pan with cooking spray. When it is hot, add garlic & cook about one minute, until soft.
Add chicken, cook, stirring often, until cooked on all sides, about 3-4 minutes.
Add broccoli, cook, stirring often, until crisp, about 2 or 3 minutes.
Add the broth, bring to a simmer, lower heat, cover, and cook about 10 minutes, until chicken is cooked through.
Cook the pasta according to package directions, usually about 9-12 minutes (which, coincidentally, is just as long as the chicken & broccoli cooks).
After the chicken is cooked through, add the yogurt to the sauce, and stir over very low heat until warmed through. DO NOT COOK THE YOGURT; it will get all clumpy.
Drain pasta and add to sauce.
Sever with parmesan if you like (parmesan calories not included in recipe)
