Spinach Casserole

Ingredients
3 large eggs2 tbsp. flour10 ounces chopped spinach (frozen or fresh)butter or margarine or olive oil4 ozs. cottage cheese, 2% milkfat6 ozs. cheddar cheese, lowfat - 2%
Directions
Preheat oven to 350. Beat eggs and flour until smooth. Cook and drain spinach. Add all ingredients to egg mixture and stir. Lightly coat the inside surface of 10x10 pan with butter, margarine or cooking oil. Pour mixture in; bake for 30 minutes. Let set after baking for about 10 minutes. Serves 4.

Note: May be made a day ahead and cooked at serving time. Broccoli may be substituted for spinach.
