Brown Rice Meatloaf

4 cups cooked brown rice4 lbs raw lean ground beef3 raw eggs2 cups cubed onion6 cloves of garlic, minced4 tbsp of Worcestershire Sauce Ketchup (lots)
Serving size is about 8 oz. This makes about 15 servings.
Combine meat, rice, eggs, Worcestershire, garlic and onion in a large bowl and kneed the meat mixture like a dough.
Place in lightly greased bread loaf pans.
Cook in a warmed oven 1 hour 375 degrees or until core temperature is 165 degrees when tested with a meat thermometer.
Then take out the "loafs" and carefully drain off any fat and then top them with a thin layer of ketchup and place back in the oven for another 10 minutes to bring out the flavor.
*Tip: If you use lean beef there shouldn't be any grease or fat to drain.

I cut this in half and used white rice. I recommend making it as instructed because 1/2 this recipe completely filled my loaf pan to the TOP but making 2 loaves would have been very small. My father in law loved it and didn't realize I had used ground turkey instead of beef. This is a keeper! - 9/17/09
