Chicken and Broccoli Divan

Ingredients
Two cans cream of chicken soup mix (or one big can)2 Tablespoons of light mayo or salad dressing1 cup milk (I use nonfat)3 ounces cooked chicken breast1 bag frozen broccoli3 Tablespoons curry powder (more or less to taste)1 cup shredded cheddar cheese (you could omit this to reduce the fat)2 1/2 cups rice
Directions
Mix together first five ingredients into casserole dish. Heat casserole dish in a 350 oven for 20 to 30 minutes, until heated through. Cook rice separately. Put cheese on top of casserole and heat another five minutes to melt. Serve over rice. Makes six hefty servings.
