Vegetable Fried Rice for 1

Ingredients
1/2 cup minute rice1/2 cup frozen mixed veggies1 egg1 tbsp olive oil1/2 tbsp lite soy saucefew dashes of ground gingerfew dashes of black pepper
Directions
1. Cook rice according to package directions

2. Add frozen veggies to a bowl with a little water and cook for about 30 seconds to soften while cooking.

3. Add olive oil to a large pan, add egg and scramble. When egg is almost completely cooked, add veggies, rice, soy sauce, ginger and pepper.

4. Cook until all liquid is absorbed from pan and the rice starts to fry. (About 3-5 minutes)

5. Enjoy!
